School is back in session! Children of all ages have returned to school, where they will be learning, making new friends, and working up an appetite.
Land Of The Gummies has put together a list of great snack ideas for your back-to-school needs. These treats are perfect for your kid’s lunchbox, as an after-school snack, or for a quick bite between meals. Your kid can also help prepare the snacks to make it a fun family activity. We hope you can try all of these at some point!
Fruit And Nut Chocolate Granola Bars
These tasty treats are great grab-and-go snacks for your kids any time of day. They’re quick and easy to make so you can prepare them in bulk ahead of time.
Start by preheating your oven to 325 degrees.
Combine ⅓ cup of maple syrup, 3 tablespoons of unsalted butter, 2 tablespoons of peanut butter, 2 tablespoons of packed brown sugar, ½ teaspoon vanilla, and ⅛ teaspoon salt in a saucepan over medium-low heat. Stir the ingredients until they are all evenly incorporated.
In a separate bowl, mix 1½ cups of oats and ¾ cup of almonds. While still warm, pour the liquid mixture over oats and nuts and begin to stir. Once thoroughly mixed, let the mixture cool for ten minutes.
Add ⅓ cup fruit (like cranberries or blueberries) and ¼ cup chocolate chips. Mix together and transfer to a 9” x 9” casserole dish or baking tray. Press mixture firmly with a spatula and spread evenly.
Bake for twenty minutes, remove from oven, and let cool.
Once completely cooled, place in the refrigerator for two hours to firm up. Then cut into bars and serve!
Blueberry Yogurt Muffins
Another delicious snack for on the go — or any time, really! Prep these blueberry muffins ahead of time for a quick and portable breakfast.
Start by preheating your oven to 400 degrees.
Combine 1½ cups flour, 1 teaspoon baking powder, ½ teaspoon baking soda, and ¼ teaspoon salt in a mixing bowl.
In a separate bowl, use a mixer to cream together ¼ cup packed brown sugar and ½ cup room temperature unsalted butter for about two minutes. Add ¾ cup plain yogurt, 1 egg, and 1 teaspoon vanilla, and continue to mix.
Mix wet and dry ingredients until thoroughly combined. Then gently fold in 1 ¼ cup fresh or frozen Set aside ¼ cup of blueberries to use later.
Add mixture to muffin tin that has been sprayed with cooking spray. Use reserved blueberries and add evenly on top once the muffin tin is filled.
Bake in the oven for eighteen minutes or until golden brown and fully baked. Let muffins cool for five minutes and then transfer to cooling rack until ready to serve
Heat 4 cups of milk in a stockpot over medium heat and stir until milk begins to simmer. Monitor the milk’s temperature over the next eight to ten minutes until the temperature reaches 180 degrees.
Remove milk from heat and continue to stir occasionally. Let cool until the temperature reaches 115 degrees.
Add 2 tablespoons yogurt starter (can be bought in most grocery stores) and whisk until evenly mixed. Place lid on stockpot and put into an oven which is NOT turned on.
Turn the oven to light heat and let sit for eight to ten hours until the yogurt is completely set. If possible, use a digital thermometer to continue monitoring the temperature. The temperature should remain between 95 and 115 degrees to ensure live bacteria stay alive during the fermentation period.
After yogurt sets, place in refrigerator and store for up to seven days.
Serve with gummy bears for an extra sweet treat!
Homemade Pizza Rolls
These pizza rolls are fun to make and will satisfy any kid who wants a savory snack. You can also add your favorite pizza toppings so that everyone can make their own unique pizza rolls!
Preheat your oven to 400 degrees.
To make the dough, combine 300 grams of flour and 6 grams of salt in a mixing bowl. In a separate bowl, mix 200 grams water, 3 grams yeast, 4 grams sugar, and 15 grams olive oil. Stir until thoroughly combined and add to flour and salt mixture.
Once incorporated, scrape the dough into the bottom of the bowl and let sit for ten to fifteen minutes.
Use hands to knead the dough until it is smooth, then allow it to rest for one hour until it doubles in size.
After the dough has doubled, take it out of the bowl and place it on a lightly oiled surface. Use a rolling pin and flatten the dough into a 10” x 14” rectangle.
Use a spoon to evenly spread 1 cup of pizza sauce on top across the dough to the edges. Add 1 ½ cup mozzarella cheese. Sprinkle desired toppings in 1” sections and note where each section of toppings is. Roll the dough up from one edge to the other as tightly as possible and seal the edge at the end.
Cut 1” sections of dough into rolls based on where toppings were placed.
Place rolls on a large baking sheet lined with parchment paper.
Bake in the oven for 20 minutes. Once golden brown, remove from the oven and allow rolls to cool before serving.
Creamy Strawberry Popsicles
Summer will linger for a few more weeks, so take this opportunity to prepare a treat that will cool your kids down! These refreshing and sweet popsicles will be a big hit while the weather is still warm. Make sure to add in Land Of The Gummies Sour Neon Gummy Worms to make those mouths pucker!
Use a food processor or blender to puree 2 cups of sliced strawberries. While blending, add in 2 tablespoons of honey.
In a separate bowl, mix 1 ½ cups Greek yogurt, 2 tablespoons honey, and 1 teaspoon vanilla. Stir in 1 cup of diced strawberries or 1 cup of gummy worms.
Bring popsicle molds to the prep area. Scoop in 2 tablespoons of strawberry puree, then 2 tablespoons of the yogurt mixture. Alternate between the two until the mold is filled.
Put popsicle molds into the freezer overnight and allow to set.
When ready to serve, run the mold under warm water for ten to twenty seconds, then pull the popsicle from the mold.
